As part of our Autumn Apple Affaire here is one of our sandwich recipes from "A Year of Teas at the Elmwood Inn" compliments of Shelley and Bruce Richardson.
Curried Tuna and Apple Tea Sandwich 1 6 ounce can tuna, drained 1/4 cup celery, finely chopped 1/4 cup golden raisins 2 tablespoons diced onions 1 small Braeburn or Gala apple, chopped and tossed in lemon juice 1/2 teaspoon curry powder 1/8 teaspoon garlic powder 1/4 cup light mayonnaise 1 tablespoon lemon juice
Mix tuna, celery, raisins, onion and apple together. In a small bowl, whisk together mayonnaise, curry, garlic and lemon juice. Pour dressing over tuna mixture and toss together. Spread mixture on whole wheat bread and garnish with small thinly sliced apple.
